Masala Chai

  • Ingredients

    • Vegetables/ Fruits
      Ginger, 1 inch
    • Herbs/ Spices
      Cardamom, 5 Pods
      Cinnamon, 1 1/2 inch Quill
      Cloves, 4 pieces
      Fennel Seeds, 1/2 tsp
      Black Peppercorn, 5 corns
    • Dairy
      Milk, 270ml
    • Others
      Black Assam Tea, 4-6 grams loose leaf or 2 tea bags
      Sugar/ Sweetener, To Taste
      Water 270ml
  • Method

    Preparation
    • Grate Ginger and lightly crush Cardamom Pods, set aside

    Cooking
    • Add Water to pot and boil
    • Add Tea, grated Ginger, Cardamom, Cinnamon Quill, Cloves, Fennel Seeds and Black Peppercorns
    • Keep water on a rolling boil for 3-5 minutes
    • Add Milk (or milk alternative) and let the tea simmer for 2-3 minutes until chai bubbles up

    Assembly
    • Add Sugar/ Sweetener (to taste) in mugs
    • Remove tea bags, if used, otherwise use a tea strainer to pour into mugs. Stir and enjoy
